A new year is here, can you believe it? It seems like 2015 really flew by! I’m not one to make specific resolutions in January but I do try to write down some general lifestyle goals. The main focus for my goals in 2016 is health. I haven’t quite gotten rid of the extra weight from my pregnancy yet because we have been eating fatty foods far too often around here. These bad habits need to change. Can you relate?
The time has come to make better food choices, y’all. Therefore, having a variety of wholesome recipes that feed my body well and taste great are vital to reaching my goal of being healthier in 2016. I’ll be sharing some of my favorite healthy recipes with you on my blog this month. These are all recipes that I have tested and tasted and plan to make frequently in the new year.
You don’t need many ingredients for this muffin recipe. It’s not overcomplicated; that’s why I love it! The combination of flavors is quite divine. It doesn’t get any better than fresh apples, cinnamon, and apple pie spice, now does it? Whole wheat flour and egg whites keep the recipe wholesome without taking away from the substance and texture of the muffins.
Apple Cinnamon Muffins Recipe
2.25 cups whole wheat flour
2 tsp baking powder
1 tsp apple pie spice
0.75 cup brown sugar, packed
6 egg whites
0.5 cup canola oil
1 cup milk, fat-free
1 cup apples, fresh, chopped
1. Preheat oven to 400°F.
2. Lightly spray muffin pan with cooking spray or line with paper muffin cups.
3. Combine dry ingredients in a medium-sized mixing bowl. Add wet ingredients and apples and mix well.
4. Fill muffin cups 3/4 full with batter.
5. Bake until done, about 25 minutes. Test with a toothpick – it should come out clean when muffins are done.

Apple Cinnamon Muffins are beautiful, delightful treats! They taste like an indulgence but they are really good for you. My husband prefers them in the morning for breakfast but I think they make a perfect afternoon snack. No matter when you prefer to eat them, I can guarantee you that they won’t last long!
