My mom always orders key lime pie at restaurants. The place could be famous for their giant chocolate volcano dessert or what have you but Mom will get the key lime pie 100% of the time if it’s on the menu over any other available option. Being the fabulous daughter that I am, I decided to make her a key lime cake for her birthday this year.
I had never seen a key lime cake before and I thought it was a pretty original and delicious concept. Mom seemed to be thrilled at the idea of having her favorite dessert made into a cake!
First things first, I looked to Pinterest to gather some recipe ideas. I did find a few key lime cake recipes online. Trisha Yearwood (who I adore) has one and I read through a few others but none of them had that wow factor that you want in a birthday cake.
So I took a little of this and a little of that and I came up with my own key lime cake recipe. It’s 4 layers of moist lime cake with a sweet and tangy lemony glaze in between the layers. Even the whipped icing has the perfect hint of lime!
The first time I made this cake recipe, I used buttercream icing. I found the icing to be a little heavy for this light cake. Now I like to use a whipped icing. I enjoy the consistency and sweetness of the whipped icing much better!
