Key Lime Cake

Key lime pie lovers rejoice! Delight in your favorite flavors with this key lime cake recipe. It’s the perfect combination of tangy and sweet!



  1. Preheat the oven to 350°F. Heavily grease and flour four 8x2 inch round cake pans.
  2. In a large bowl, mix the gelatin, sugar, flour, salt, baking powder, and baking soda. Stir to mix well.
  3. Add the eggs, oil, orange juice, lemon juice, vanilla, and lime zest.
  4. Add green food coloring as desired.
  5. Divide the batter evenly among the 4 pans and bake for 25 to 30 minutes.
  6. Test for doneness by inserting a toothpick. Cool the layers in the pans for 5 minutes, then turn them out onto racks.
  7. While the layers are still hot, mix the lime juice and confectioners’ sugar for the glaze.
  8. Use a fork to poke hole into the four cake layers. Pour the glaze over the layers on the racks.
  9. Allow the layers to cool completely as you prepare the icing.
  10. Ice all four layers as you stack them to create the cake. Ice the top and sides of the cake.
