We frequently suffer from Drab Dinner Syndrome around here. When my family is in the mood for Italian, I often succumb to what’s easy and just make spaghetti . . . again. So boring. Spaghetti really gets old.
If you’re like me, maybe you haven’t served a lot of pesto dishes before but a new flavor concept can be pretty exciting for you and your family. I never get complaints from my husband about having leftover pesto chicken lasagna either. In fact, he is pretty bummed when it’s all gone.
With its fresh and tangy flavor, pesto is the star of this dish! I hope it’s a winner at your house. Be sure to read on to the end of this post for a shortcut to this recipe.
Pesto Chicken Lasagna
The recipe looks doable, doesn’t it?
Good. That’s what I’m all about. I’m also all about shortcuts. We lead super busy lives so I like to include a shortcut in most of my recipes. It’s pretty easy to whip up some fresh basil pesto for this lasagna recipe but it’s also nice to have an alternative. May I suggest trying Buitoni‘s pre-made pesto sauce? It can be found in the refrigerated section at your grocer.
This pesto is “eat it with a spoon” worthy and it’ll save you some extra steps so you can get dinner on the table faster. Whether you make pesto yourself or pick it up at the store, this pesto chick lasagna is yummy, easy and drab-proof. Let me know if you try it!
