We moved from Dallas to an Amish town in rural Ohio about 1 month after we got married. We were only there for about a year because my husband’s business project came to end. It was a rough year though and I was homesick a lot. However, one good thing did come out of it . . . slow cooker pot roast!
In hopes of making the most out of the harsh cold weather during my first winter up north, I cooked a lot of pot roasts. I’d never attempted to make one before I became a wife and in Ohio, I had plenty time to try (we were in the middle of nowhere) and a personal taste tester, my new husband. Some recipes were ok and some were bland and boring.
I could always tell if my meals were delicious by my husband’s reactions. He wouldn’t say anything if was not-so-good but he wouldn’t go in for seconds either. If he liked it, he’d have seconds and thirds and sometimes fourths. Through these recipe trials and an even more trying winter, I finally came up with a slow cooker pot roast that works for us. It’s a simple recipe but it turns out great every time. It has had my hubby returning to the dinner table for about 5 years now so it must be worth sharing. Enjoy!
